Implementation of Value Stream Mapping in Food Industry

Abstract


In present market firms are contemplating for enhancing their efficiency, item value, maximize utilization of their resources and to do so company needs lean manufacturing. Value stream mapping (VSM) can be recognized as critical instrument of lean manufacturing as it helps companies to identify wastes occurs in their processes and provides an approach to eliminate them. VSM helps industries maximize their available resources and helps to make efficient use of materials and time by creating a sound implementation plan. In this paper VSM is implemented in XYZ biscuit manufacturing industry for biscuit named milk cookies. Data related to production of biscuits is gathered from the manufacturing plant floor directly. Current state map is prepared by using data collected from the industry. With the assistance of current state map major wastes are identified and by using lean strategies and tools a future state map was suggested. Result obtained after implementing VSM was lead time reduced about 21.4% whereas WIP reduced approximately 83.9%. E draw max is used for sketching current and future state map.
